I made this for Christmas brunch at it was a hit. I used turkey sausage and omitted the peppers due to picky kiddos. Will definitely try it again with mushrooms and peppers for an adult crowd. Thank you!

It’s a Christmas miracle – my whole family loved this casserole! It was so quick to prep the night before and it cooked while I relaxed and watched my children open presents on Christmas morning. What a gift to have a delicious Christmas morning breakfast with zero attention taken away from the big morning. Thank you so much! Super easy to put together and great for a group! I like to use the entire onion and usually add lots of extra veggies (typically bell peppers, mushrooms, and zucchini).
